Characteristic
Kojic acid crystals are prismatic, acicular and colorless. Kojic acid soluble in water, alcohol, acetone, slightly soluble in ether, ethyl acetate, chloroform, pyridine, insoluble in most other solvents. It can be purified by crystallization in acetone, ethyl acetate and other solvents, and can also be sublimed under pressure at 150 ~ 200℃.
Application
Kojic acid may develop into a new food additive. Its performance as a food preservative is better than that of sorbic acid.
Kojic acid is an inhibitor of tyrosinase, which can preemptively mix with copper ions in tyrosinase, so that copper ions lose their effect, and then inhibit the synthesis of dopa pigment.
The complex of kojic acid and divalent heavy metals is more effective against several plant fungal diseases than Bordeaux liquor (an insecticidal and bactericidal agent).
Kojic acid can be used as raw material for producing cephalosporin antibiotics.
